About the Recipe
Easy fresh and healthy Chickpea salad makes a perfect side dish for almost any meal.

Ingredients
2 cups boiled Chickpeas (Kabuli Chana/Garbanzo beans ) drained  and rinsed*
1 cup chopped tomatoes
4 Medjool dates, pitted and diced
2 Cucumbers, sliced into thin half moons
⅓ cup chopped Red Bell peppers/ capsicum
¼ cup finely chopped parsley/ coriander
2 tbsp crumbled cheese or paneer. Skip the cheese or paneer for vegan version.
¼ cup fresh mint
You can use any combination of your favorite raw seasonal vegetables.
Dressing
2 tablespoons extra-virgin olive oil
3 garlic cloves, minced
2Â tablespoons lemon juice
3/4Â teaspoon sea salt
Freshly ground black pepper
1 tsp roasted ground cumin seeds
Chickpeas have to be soaked overnight and cooked in a pressure cooker.
Preparation
Prepare the Dressing- In a large bowl, combine the olive oil, garlic, lemon juice, salt, pepper and cumin powder. Whisk well.
Add the chickpeas, tomatoes, dates, cucumbers, red pepper, and parsley to the bowl and toss.
Transfer to a serving bowl or platter with the cheese, sprinkle with mint. if desired.
 Season to taste and serve.
