Healthy protein rich Soybean and Vegetable salad. Vegan and Gluten Free

Ingredients
1 Cup Boiled Soybean
4 cups chopped vegetables- Onions, Tomatoes, Cucumber, Radish, Bell peppers ( Capsicum). More Vegetables of your choice can be added.
1 cup fruit (Pineapple/Apple/Kiwi fruit)
1/2 cup chopped Coriander or Parsley leaves
For Dressing
1 tsp Olive Oil
1 tsd Lemon juice
Salt and Pepper to taste
Preparation
Mix the boiled Soybeans with Chopped Vegetables and Fruit ( pineapple tastes amazing in the salad)
Mix the ingredients of the dressing and toss into the salad.
Mix well and let it rest in the refrigerator for an hour.
