About the Recipe

Healthy protein rich Soybean and Vegetable salad. Vegan and Gluten Free

Ingredients

  • 1 Cup Boiled Soybean

  • 4 cups chopped vegetables- Onions, Tomatoes, Cucumber, Radish, Bell peppers ( Capsicum). More Vegetables of your choice can be added.

  • 1 cup fruit (Pineapple/Apple/Kiwi fruit)

  • 1/2 cup chopped Coriander or Parsley leaves


For Dressing

  • 1 tsp Olive Oil

  • 1 tsd Lemon juice

  • Salt and Pepper to taste


Preparation

  • Mix the boiled Soybeans with Chopped Vegetables and Fruit ( pineapple tastes amazing in the salad)



  • Mix the ingredients of the dressing and toss into the salad.


  • Mix well and let it rest in the refrigerator for an hour.
